The Grille is located above the bar and terrace, offering panoramic, seaside views and ocean breezes. The décor is in keeping with our classic aesthetic of relaxed luxury. The simplistic, whitewashed décor is accented with black and white wood cut prints by Jamaican artist, Albert Huie, adding a touch of historic perspective to the dining experience.
The Grille features the only indoor, wood-fired grill on island, using local, indigenous logwood. The wood imparts a touch of smoky richness and is used in a mixture of torched wood for earthy flavour and sweet wood to round out the finish. The open kitchen allows guests a glimpse of the busy chefs as they prepare the evening’s meal.
The Modern Caribbean theme of the resort’s cuisine at The Grille is simple, locally produced (where possible) and sustainable. The focus remains on sustainably-grown, humane and organic products. Much of the produce is sourced from the surrounding area or our very own organic garden.
Seafood is as fresh and local as its gets, sourced from the Caribbean, Gulf of Mexico and nearby Jamaica waters. Daily fresh offerings are usually Snapper, Grouper, Mahi Mahi and local Caribbean spiny lobster.
