In 2022, my Brother-In-Law, Jimmy Carr, announced that he would like to take his family, his mother, AND his Sister-In-Law to Round Hill for Thanksgiving. Needless to say, we were all ECSTATIC. I could barely sleep for the months leading up to it. I hadn’t been back to Jamaica since I had lived there in 2009 when I was in the Peace Corps. I lived in Flagstaff (Maroon Town) and Port Antonio. Jamaica was the perfect place for me to serve. I fell in love with everything about Jamaica; falling MOST in love with Dancehall and Ackee and Saltfish. So when we came to Round Hill, I mentioned to the Villa Staff that my favorite meal was Ackee and Saltfish. I then woke up EVERY morning to an incredible Jamaican breakfast buffet of Ackee and Saltfish, boiled bananas, Calalloo, and fresh local fruit. It was a week of heaven on earth; all of my favorite Jamaican foods, swimming in the Caribbean, spending time with family and listening to old school Reggae. Jamaica holds a more than special place in my heart and I would love to bring my sweetheart there to show him the magic - and have him eat Ackee and Saltfish with me every morning!
